I'd be shocked if you don't have to provide all your GRE scores in the application.

Yes, you are correct...most applications require you to submit all scores from the last 5 years.
With that said (I haven't actually gone through the application in detail yet, so I could be wrong here), I believe you still need to enter some sort of "primary" score on the application.
If that is the case...any recommendations? Or is it an immaterial concern?

No, there's no significance. You may need to list the most recent one somewhere on the app where you don't list all the others (I don't know), but applying "under" a given score isn't a thing.
