Non URM Hispanic is a good soft, and they can include you in their "student of color" statistic. Ever notice how some schools brag about their 40% minority enrollments but 25%+ are Asian, and are actually way overrepresented? Yeah, you may not be an URM or ORM but you're a student of color.
That said I would say 60/40 acceptance at NYU and 40/60 at CLS. At worst, if your application is strong, I think you will get wait listed until they can compare you to January-March applicants. It's doubtful you will get much money RD, so if you are 100% fine with sticker and big law then ED may bump you to 70/30 and 50/50 respectively.
Chicago is going to be a longer shot than NYU but maybe more likely than CLS.
