You are at the LSAT median and above the GPA median for both Columbia and NYU. Don't ED to either one. You should get some money from one of CCN.

I think you could RD all three without much problem, C is about 80% NYU 90ish, someone on LSN last year got 50k with your numbers at Penn.

I would just ED to whichever of NYU or Columbia you want more. MVP can be so iffy because of YP, but I like your chances at at least 1/3 there. Probably not UVA, since you're under their GPA median.
If you only want to go to one of NYU/Columbia/Penn, which I kind of get the sense is the case, ED to one of NYU/Columbia.
