Visiting UVA
I was planning on visiting the school to get a feel for the campus, talk with students, and sit in on a class or two. Can any UVA students guess if it'd be a bad idea making the trip a day before fall break begins?

I don't see a problem with this. It wouldn't be the first time someone who wasn't in our section sat in a class. Just don't bust in late to one of those classes.*
Honestly, just call the Admission Office and see if it's fine. But I for one don't see the problem with the timing - doesn't mean there is one.

Stick around that night and get drunk with UVA students. Then you will get a real feel for the school.

If you are concerned whether classes will actually be in session and people will be there, I'm sure they will. You might run into the folks from Virginia mass exodusing home for a few days after classes are over and that might change the atmosphere if you go out at night, but it is a professional school and I doubt that many are going to go home to their parents, especially a day early.

if you're planning on applying ED regardless, is there a boost to the application if you visit?

Visits to law schools are mostly for when you are trying to decide where to go or if you are going to ED to the school.
Personally, I visited the law school to make sure I was making the right choice to ED to the school. The visit left me with zero doubt. I submitted my ED paperwork on the spot.

I visited about 6 law schools and UVa had the best facilities out of all that I saw. The thing that stood out to me the most about UVa is how much everyone seemed to love it - truly love it. The area is extremely charming but absolutely not a big city - it may be a bit of a shock if you're used to living in a big city.
