I only have two recommenders at the moment because one of the people I emailed never got back to me. :? Trying to decide if I should look for another academic reference, or if I'm okay sticking with 1 academic, 1 professional.

Unless you're well out of UG, I would definitely plan to have 2 academic.
And well out of UG should be defined as 7-10 years out.

At least for me, soliciting LORs from my professors was unduly difficult and took a ridiculous amount of time. I'd try to nail down the strongest LORs you can get and let that dictate your schedule.

I just want to give enough time for others to claim OP status, especially if anyone really wants to do Berkeley. Some of the newer posters might just be waiting to get to 100 posts.
I would attempt to do it if I could reach 100 posts. However, nobody has said anything so inflammatory as to make me start posting fast enough to reach that goal within the next month.
