Okay so if Harvard's policy this year is "no holds," do we know whether that means:
1. They are still holding applicants, but just not using the term "hold" to avoid annoying questions/confusion
or
2. They are not holding applicants at all.
If I understand correctly, wouldn't the former benefit early applicants who have not been accepted? Or do I misunderstand the concept of a "hold" entirely? Or has this question already been answered?

I'd say it's one given that JS said in a recent blog post that if you applied early and haven't heard back it's because they need to consider your application in the context of the entire applicant pool. That is essentially what a hold is in practice.

The way I understand it, there used to be an actual "hold" status, ie: you would be notified that your application was being held for further review at a later date. What does it mean if I applied the day that the app came out but I haven't heard anything (waitlist, rejection, JS1, nothin at all) since September?

It probably means they like you enough to keep you through two rounds of dings and are probably trying to get a sense of where you stand compared to the larger applicant pool before either rejecting you or offering a JS1.
You may be headed towards a waitlist, though there will also be more dings before those come out.

So we know there are 1200 JS1s and about 850 acceptances. How many of the 350 who aren't accepted from that are waitlisted?
If anyone knows, obviously.

how many JS2 have there been so far out of the expected ~1200? It seems like the Harvard class of 2017 FB page has actually gotten smaller since I last checked (unless my memory is way off). Are people already withdrawing?
