I'm about 90% sure I'll be at SLS next year, but I'm going to go to HLS's ASW to at least give them a chance

You can take most anything 2Ls and 3Ls can take, but there are a handful of exceptions (especially the writing courses). Evidence is the most popular choice by far, though Antitrust, Employment Discrimination, and whatever First Amendment class is being offered usually end up with a handful of 1Ls as well.
The only required class Spring Quarter is Fed Lit (the writing/oral advocacy one that starts as Legal Research and Writing and goes all year), so we'll get to choose upwards of three-ish electives. There are a handful of restricted classes again, but most everything is open.
That's a plus for Stanford—you take electives early on, and you can take most anything you want. You pay for that flexibility first quarter, with four big doctrinal classes, but come spring, it will have been worth it.

Off tangent, but do most 1Ls get Munger if they want it?

Prevailing wisdom is yes, since 1Ls have priority, but there are sometimes exceptions. If you list Escondido Village as well, you'll get placed there if Munger doesn't work out. Off-campus housing is outrageously expensive, and SLS guarantees that you'll receive at least some type of on-campus housing if you apply for everything you're eligible for.

Any insight into the deferral request process? I've already seen SLS's brief online deferral statement; but any word on how open SLS is to granting two-year deferrals for non-TFA/Peace Corp programs (i.e. corporate rotational programs)?
