Does anybody know how to deal with deadlines at schools at which you have an offer and being on waitlist elsewhere? NYU needs my decision by May 1 but I have heard that HLS has people coming off waitlist in Aug. Any advice?

You can matriculate at NYU (submit deposit) and stay on Harvard's waitlist as long as you want.

I've seen schools wanting you withdraw all "pending" apps as well, which includes everything but waitlisted schools.
So to technically comply, I'd wait until the last possible day to deposit just incase you get waitlisted or accepted at NYU between now and then.

I don't think they really check adherence to that policy though, and the more strict language may only involve the second deposit rather than the initial deposit. The second deposit some places has a more strict letter of intent type thing.

I accept my scholarship and plan to enroll at Northwestern Law, beginning Fall 2017. A non-refundable $750 tuition deposit will be received by the Office of Admissions and Financial Aid at Northwestern Law by noon CST on the date outlined in my scholarship notification letter.
so I think pending apps are fine. I withdrew all of my acceptances anyway so I'm in the clear there.

NYU have an exceptionally high waitlist acceptance rate. About 30-34% of those who choose to stay on, usually. This year especially, with what feels like a lot of waitlist decisions being thrown around and even Spivey saying he broadly expects a lot of waitlist movement this summer, an NYU waitlist certainly doesn't seem like a guaranteed rejection. Just making the most of a bad situation I guess. I'm sure a lot of people here will be posting about their newfound acceptances in the NYU c/o 2020 waitlist thread 1-3 months from now.

Depends on the school's language on the deposit. For instance NYU has you sign (digitally) a form that indicates that you will withdraw from all other schools and will not request to be reinstated for any other school.
