I would rather not do Europe, we have both been there a fair amount. Her requirement is warm weather and atleast part of the time in a beachy resort. I want to spend a bit of time exploring and seeing some culture.

South America is actually one of the only places I have not been. I just had some friends who are huge history buffs decide against the "let's go somewhere warm with beaches" route, and did a tour of castles and distilleries in Europe. Definitely will fit the bill. We honeymooned in Costa Rica, backpacked and took busses everywhere, so it was significantly cheaper than your budget. And the Pacific beaches are beautiful. Amalfi Coast in Italy man. Beautiful towns nestled in the mountains along the peninsula. Praiano, Positano, Amalfi, Maiori, Minori, Salerno and more. All very cool to explore and they have sandy beaches you can enjoy. I fell in love with the place while I was there and it hurt to leave. I just got back from SE Asia, on a considerably cheaper budget, and you can absolutely do both there. Phuket has tons of beaches (wasn't a huge fan of the one I was on, but that's a different story), and it was a short flight to all sorts of different areas for exploring/culture. Also going to suggest Costa Rica, but my opinion should be taken with a grain of salt because I have family there and therefore haven't had a touristy experience. How cold does AU/NZ get in their winter? Would a June trip fit jj's requirements? I definitely thought about SE Asia. The humidity, rain, and heat there during June turned me off of it.
