Lost track of status updates to be honest, but completed my interview yesterday and then had a date change later that day. Not sure if they do an interview received update or if this is UR3.

Sorry if this is a silly question, or has been answered elsewhere - but how do you distinguish between UR 1, 2, etc., if you haven't been keeping watch between statuses? If there's even a way, of course.

There isn't another way unfortunately. You have to watch your status dates so you can tell when they change.

Just cause I'm bored and hopefully going to be making this decision in a couple months, how much more would you all pay for Chicago over MVP or comparable schools? I have a fascination with UChicago and would prefer to go here over probably any school, but don't love the debt. I'm thinking I'd pay maximum 50k more over Michigan.

It's a stage before the interview but after UR1. I'm not totally sure why they do it, though I did go UR1.5. UR2 technically follows the interview I believe?

This is right, I think. I’ve had four date changes so far: Under Review, UR 1.5 (if you want to call it that) prior to interview, UR2 after completing the interview, and UR3 a few days ago.
