I was actually curious about this, too, so I looked it up a while ago and found this explanation: http://www.law.yale.edu/about/YLSShield.htm

The gator and dog are the heraldic symbols of two of YLS's founders -- the bottom right portion sadly isn't indicating a future full of croquet, but it's still pretty cool. According to the video at the bottom of that page, the third founder, Seth Staples, didn't have a heraldic symbol so they just added some staples for him, which I kind of love.
