I know, for the week after my interview I felt pretty good about it. But the more time passes, the more I start second-guessing myself and the impression I made. I guess we'll find out soon enough!

Submitted my app on 1/10, LSAC complete and reported on 1/15, still haven't received any email acknowledging that they've received my app....this normal?

These are the dates I have in my notes for my application:
1.10 I submitted app. on LSAC.
1.10 Chicago status checker says "Application Received" (that date could easily be wrong by a couple of days though)
2.3 Status checker says "Application Complete"

If your status checker doesn't say they have received it then you should email them.

Additionally, Chicago releases decisions all at once in giant waves. There has only been one wave so odds are the people who interviewed will be in the second or third wave. No need to panic yet.

I submitted 1/8 and got the application received e-mail on 1/9. Are you checking your status checker? maybe the e-mail somehow got lost in cyberspace.

I've seen offers go to people with a range of stats. This cycle I've seen 3.9/171, 4.0/172, 3.9x/174, and up to the higher ends.

What if I need to update my application?
The Admissions Committee strongly prefers that you submit all necessary information with your initial application. If it is necessary to update your application, you must email your updated information to the Admissions Office at admissions@law.uchicago.edu. Electronic updates will be uploaded to your file in our electronic database (but you will not see this update on your status checker). If you are sending an updated transcript or an additional letter of recommendation, you must send them through CAS. After your online status checker indicates that your application is "complete", you may no longer submit any additional materials for your file unless (1) the Admissions Committee requests additional materials, (2) your update pertains to the Character and Fitness sections of the application, or (3) your update is necessary to ensure that the information you have provided in your application remains truthful and complete.

wouldn't number 3 include a transcript?

Yes, you can send transcript updates through LSAC.

The question was about a resume, though. Since there's no expectation that resumes include every job you've ever worked, though, I don't think a resume update falls under (3). Maybe negative updates (like if you get fired from your job) but that's a bit of a grey area and you're probably best off waiting to let them know until you get admitted.

Also, what percentage of people who are interviewed get in/are wait listed? Anyone know that stat? (sorry, dealing with interview anxiety lol)

This is only the second year of Chicago's interview program, and last year it was very obviously rough around the edges, so we have no real data to answer your second question.

I'm predicting this Tuesday. Normally waves are are 3-4 weeks apart and the first wave was 19 days ago.

Last time, there was a wave of interview invites a week before decisions went out, and I think there were also a lot of date changes for people receiving an acceptance. We haven't seen either of those things, have we?

My money is on interview invites this week (this evening, if the pattern holds) and decisions next Tuesday.

No. There's delay between UR2 and an interview request. I got my interview request about two weeks after I went UR2. Some people have gone two months in between, if I recall correctly. There's no need for concern yet.
