Is reference to Chicago as "Chicago Law School" in my diversity statement considered acceptable or should I spell it out "The University of Chicago Law School" ?

I would say "The University of Chicago Law School" that is perfectly acceptable.
After you have introduced it, I would call it "The Law School" (Which is what the faculty/alums call it)

Program sounds awesome.
