Take advice from a 3rd generation Dallasite who grew up five minutes away from SMU (not a parkie, but closer to Highland Park High School than my zoned DISD high school):
To be honest, there's really not all that much to see in Dallas, unless you like shopping malls--like North Park and the Galleria. There's Dealey plaza--where Kennedy got shot--and the Nasher sculpture garden. The best museums and cultural/historical stuff are in Fort Worth.
I'd say that SMU's campus is easily one of the top five most beautiful in the U.S.--especially this time of year when the flowers and trees are blooming. It's simply gorgeous (and the people are too).
In terms of eating, in general, eat at any Tex Mex place not named Taco Bell/Taco Cabana/Taco Bueno/Chipotle or any barbecue place. You really can't go wrong. Manny's is my personal favorite texmex joint, and it's not all that far from SMU--just a couple of exits down central expressway.
If it wasn't for the fact that I have offers at two top 14s, and don't really want to stay in Dallas (at least initially), I would go to SMU in a heartbeat.
