What kind of stuff do people normally write about in "Why UVA" optional essays? I'm sort of drawing a blank and don't want to sound overly "bullshitty."

Depends on what you want to do. If you have an idea about where you'd like to end up, find out how uva gets you there.

Is it suggested to write a Why UVA? I applied late october and have not heard anything. I submitted a diversity statement instead of a why essay

Yes, unless you covered Why UVA in your diversity statement or personal statement.
