I had a strange complete date...submitted on 2/28 and went complete a whole two weeks later on 3/14...I wonder if anyone had a similar situation given that a ton of people were probably applying on that last (at least originally last) day to apply

Yes, you're fine...I went complete 3/12, and submitted a couple days before that (original) deadline.
