Wrong, absent doesn't count against the limit because you don't take the test. It only counts if you show up and check-in.

Jeffort, I'm freaking out now. I've sent LSAC a dozen emails with screenshots of my LSAC account trying to show them it's their fault that I couldn't make the withdrawal. I don't think anything is ever the LSACs fault.

Why are you freaking out? The next LSAT is in June, which leaves plenty of time to sort this out.

OP: have you tried logging on to LSAC with a different web browser? Some websites work better on certain browsers, so maybe this could be worth trying?
