Ultimate, Endurance, or Extreme Endurance?
I'm new to the LSAT so I just want to make sure I buy the right one. TYIA.

It is always better to do PTs with five sections. The point of doing PTs is to get your pacing and and focus down, so doing four-section ones is kind of a waste of time. I doubt going all the way to six sections is beneficial; you're probably better off just doing back to back five-sections if you're worried about extreme endurance. So among these three options I would pick extreme endurance to minimize the number of four-section tests you are given. You can make 39-51 five-section tests on your own, but it'll be kind of a pain in the ass.
