I have the Cambridge books that have every single question from prep tests 1-20, 20-40.
When doing PithyPike's plan, should I complete all of the questions for a given type or should I leave some?
I ask because I am concerned about 2 things:
(1) Not being able to finish every question for every type in the 2 months assigned for drilling
(2) Not having leftover questions for drilling later on
So should I just do like ~4 days per question type of 10-20 questions a day? or something like that?

Do whatever feels comfortable, intensive, and effective for you. I drill around LR 25-35 questions a day. Just make sure you have enough time prior to test day to finish all the timed PTs you plan on taking.
if later on during the PTing phase you feel like you want material to drill on, there's no problem in redoing some of the problems you drilled earlier. if you manage to remember the exact answer you put earlier, focus on why the question is correct and submit that into memory.
