I used to track my food, and I'm glad I don't anymore. For any meal I eat a palm sized portion of protein, add some good fats (ghee, oils, butter, etc.) and have 2-3 cups of veggies/greens. Stay away from grains, legumes, and added sugars. Eating healthy is all about eating fresh, whole foods. Nothing in a box. And since I saw something about eggs earlier itt, they do not raise your cholesterol. I definitely do not eat as healthy as you do. LOL. I do IIFYM because I can eat things like pop tarts or chipotle pretty often. hahah. Granted, I ate a traditional bodybuilder brown rice/broccoli/chicken diet while I was losing 75+ pounds. It definitely worked but mentally was drained after a year. I powerlift as well. It's the best form of exercise you can do, imo. I cut up some chicken breasts (preferably air-chilled, organic, pastured) and pan fry them in coconut oil, then add whatever veggies you like (I like carrots, broccoli, bamboo shoots, and a variety of peppers) and finally add coconut milk and curry powder or paste to achieve your desired texture and taste. For the cauliflower rice, just grate some cauliflower up coarsely and then saute it in coconut oil with onion and garlic.
