I'm assuming that the human practices fighting against canines, but frankly wolves only have one avenue of attack.
As others stated, it depends greatly on the scenario that goes along with the hypothetical scenario, but humans can evade bites and deliver punishing blows to a dog/wolf if they are able to remain collected in the face of the snarling teeth.
Plus even if the wolf grabs an arm/leg, your other arm can go for its eyes/other exposed body parts as a bite to anything not a major artery is not immediately incapacitating.
Wolves typically hunt in packs by harassing/tiring out and delivering bites from many different wolves against a single target and would be significantly at a disadvantage in a 1v1 with an opponent who likely outweights them either slightly in the case of a typical MMA fighter, or significantly in the case of a bodybuilder/powerlifter.
