When posts mention that academia is extremely hard to get into are they just referring to professor gigs or does that include admission gigs? Being Dean of Admissions or part of that admissions team at a law school would seem to be a very sweet gig... Can anyone chime in?

I can't speculate on what other TLSers definition of academia is. If you have 75 professors and 1 dean at a school, does it really matter?

I always get the sense that getting an administrative job at a law school (admissions/career services) is something a person blunders into. I'm probably wrong, but I don't think there's any way to chart a career path toward that end.

They are referring to professors (generally not including adjuncts).

Is it hard to get a job as an admissions officer? I have no idea. It seemed like most of the adcomms I have met spent a few years practicing before becoming an adcomm (for what reason, I have no idea). I'd imagine being dean of admissions is harder than professors, but that regular admissions officer is easier. Admissions officers are "bar preferred" (not "bar required") jobs and if I had to guess I'd hazard that they are probably hard to get right out of school because they aren't very plentiful and that you would probably be competing with lawyers who have actual work experience.
