Which GPA do schools report?
Do law schools report the GPA you had when they accepted you or the GPA on your final undergraduate transcript?

Though, I'm not 100 percent certain, I am pretty sure it is your LSAC GPA.

I am going to give you a serious answer. Schools reports the LSAC GPA to US News.

If you look at the grids on LSAC under the Law School Description, most schools have a section for "No GPA," so why would it be the LSAC GPA? You always have an LSAC GPA as far as I know - it's even converted when you have an international degree. e.g.

i wonder if this is why schools usually require you to send your final undergraduate transcript directly to their admissions department, and not through lsac. to protect them from gpa dips after you're accepted?

Probably and to make sure you don't have senioritis. It is usually conditional acceptance.
