Having a set day would be much easier. When it can come any day it's impossible not to think about, and be less productive at work because you associate your computer with the bar results. With a set day the last day is more stressful, but only the one day. On the other hand, I guess if there were a deadline they'd make it later so they could be sure all the tests were graded, and one would have less time to study for a retake.
