Given your number one priority and your other priorities I don't think law school is necessarily a good choice. You probably won't make a lot of money unless you go into big law, and there goes the good predictable hours and the job stability. Seems like what you want is kind of a unicorn. Good luck mounting it but I don't think law is going to do the trick. You can maybe get some of that stuff but not all of it and a lot of those things are conflicting pretty much no matter what career you choose. If you want to be a lawyer and can figure out a realistic job in law that actually aligns with your priorities (or, if you can find a way to realign those priorities) then maybe law school would be a great choice for you.
Also saw that you worked at a firm in Houston. Long hours seem pretty routine there in big firms based on what I have seen. You might have been shielded from a lot of stuff- as a summer associate I'm sure I was shielded from a lot of stuff but I still saw stuff that you weren't exposed to and friends who worked at other firms had similar experiences (not to say that it's a wasteland, just that there is a lot of grinding and not everyone always gets along)
I can't really speak to the merits of banking or consulting. One thing that comes to mind is you could try one of those paths and then if you don't like it switch to law if you really wanted to. If you jump into law school right away you likely will get locked into that rather than have that flexibility.

why not get a phd econ or mba? law is not "a low-risk, stable and secure job"

lots of grass is greener syndrome on this site. lawyers and law students as a group are invariably a more pessimistic bunch than biz people. when you hear TLS'ers railing hard on the side of banking/consulting, take their advice with a huge grain of salt. The only people you really should be listening to are those who have various white collar professional experiences (e.g. Lawyers turned bankers, or ibd analysts/consultants who went to law school, etc.), and even then you will have to temper their advice based on the choice they made and the predispositions or biases that come with said choice
that being said, try to look into the types of things you'd be studying in law school and see if they are of any interest to you. if you have absolutely zero interest in the law school curriculum, then that's a strong reason not to go to LS. even though it might not have much to do with your day to day in big law, your ability to maintain even a semblance of an interest in the subject matter will have some bearing on your law school performance, which will have an effect on your ability to get big law (which I am assuming is your #1 goal in all of this)
