My opinion is worth shit, but my $0.02 is mention it very briefly just to show that you were doing something at the time. Don't add bullet points with "responsible for ensuring customer satisfaction", etc. Just be like "Jan. 2000 - Feb. 2002, Applebee's, Waiter Fulltime" and move on.

List volunteer and real employment together in one section called "Experience." Basically list the volunteer gigs the same way you list jobs (with description), just make it clear in the job title that the volunteer ones are volunteer. Chronological overlap is ok, because sometimes people work two jobs at once.

Many, many people go to law school without any really good work experience (some have no work experience at all). Your resume won't be unusual.
