any past/present chancery court clerks or anyone generally who knows what kind of job prospects chancery court clerks face?

Current court clerk. Chancery clerks are in high demand, job prospects are very good. The Court is also very selective so job prospects for people clerking is generally quite good before clerking as well (but there's no doubt clerking boosts your credentials and improves your job prospects).

Random offshoot: Do you know what prospects are like for people who clerk for federal district judges in Delaware? How much of federal district court litigation in Delaware is Delaware-specific?

Sorry, don't know a ton about the job prospects for clerks from that Court. My understanding is that the docket is very patent heavy so I would think clerks interested in IP would benefit more in terms of job prospects from clerking in that Court than clerks not interested in IP.

Not any more than any other court. Its federal court, no state law disputes unless diversity jurisdiction.
