My prof gave an exemplar of a promissory note to aid us in the drafting process, but he said we are encourage to do our own research to see if we like another format better. Does anyone know where I can find a good example of a promissory note? Thanks!

Get a PACER account. Go to any random bankruptcy. Look for a note (should be attached to any proof of claim or motion for relief from stay).

I don't think you need to follow a specific format for an effective promissory note.
