So November is the earliest we should be doing practice tests? One professor advised to find a question from his old exams dealing with only material we've covered so far and attempt to do it. So far I've just glossed over what types of questions are on old exams, seems to help me view class sessions in the right lens.

I hate class and have a really hard time paying attention even after turning off my phone and computer. I feel like I'm going to miss something important in class even though I understand the rules and doctrines fine just from the readings and supplements.

Class is mostly a waste of time. I would still pay attention to learn how the professor thinks about problems and what they emphasize. I stop paying attention whenever a student asks a question or goes on for a long answer. I also stop paying attention occasionally just because. It's not a huge deal.
Communicate now with those who not only know what a legal education is, but can offer you worthy advice and commentary as you complete the three most educational, yet challenging years of your law related post graduate life.

I'm stressed from legal writing. It takes up way too much time, but it's the only class with required homework, so I end up falling behind on my reading just to keep up with it. I've missed a few of my other classes' lectures from a combination of power outages and lack of sleep (working on legal writing). Where I used to be pretty excited about going to lectures, now I just dread them, scared I'll be called on that day.

dude/dudette, if you're spending so much time on legal writing that you're lacking sleep and missing class, you're spending way too much time on them. There is no way that any homework you get for that class should be taking you that long. As for worrying about being called on, don't. I can tell you that I had embarrassingly bad cold-calls in almost all of my classes 1L, no teachers remember that stuff, none of your normal peers will care/judge you for messing up, and those that do are pieces of trash who should be euthanized anyway so who cares what they think.
