Are there firms that are known to hire post-clerks and folks who have clerk experience?

My actual, non-snarky answer is that it's easier to name BigLaw firms in NYC that DON'T hire clerks or value clerkship experience. So you may get more help from TLS if you identify a particular firm and the website doesn't have a section that explains their policy on hiring clerks.
