How Often Do Hiring Committees Meet?

Obviously going to be firm dependent, but how often do hiring committees generally meet to review lateral candidates during a normal time (when summer associate hiring isn't in full swing)?

That week or the next depending on the last interview or how much of a hurry folks are in

We meet each week following an interview and some weeks without an interview to discuss other matters. A lot of discussion elsewhere that I'm not privy to because I'm not important. I only do lateral hiring as we have a sub-committee for OCI.

Covid changed this a lot though.

For lateral recruiting, does each biglaw office have its own hiring committee, or is there one firm-wide hiring committee that decides on laterals for every office?
