Have callbacks outstanding for at least 3 weeks now from a few firms and wondering how I should best express my continued interest in the firm. I don't have resume updates to offer, but the radio silence is killing me.

Definitely send a short email! Say thanks again for scheduling the interview, you enjoyed the interview, you are writing to restate your interest, and then ask to please provide any updates on your application at their convenience. Just follow-up with the HR person with whom you previously dealt.
