Working a non-law job at a firm that didn't offer a call back
Have been offered a non-law regulatory compliance job at a V5 firm for the final two years of school with a summer off for SA. (Evening student) should I take it and try to get hired as a lawyer at graduation?

Does this firm normally hire lawyers from that position?
I'm betting the answer is no, but if it's a regular practice of theirs, then absolutely take advantage of that.

You should take it if you want the job, but don't put all your eggs in that basket, they probably won't hire you as a lawyer.
