how much conflict would result in an offer getting rescinded? If, for example, you got drafted onto a short doc review for a case at your old firm and opposing counsel was an attorney at a different office of your new firm, that wouldn't matter for hiring, would it?

Nope--most firms will just put up an ethical screen before you get there if there are any conflicts. Not a big deal at all.
