I've gotten some different advice on this, so I figured I would ask here.
For my 1L summer I'm considering some options. I'm either looking at being an RA for two professors or I'm looking at being an RA for one professor and getting some work experience doing some legal work elsewhere. Both professors are well-established and have been teaching for many years. The work experience would likely be something in a government office.
Any thoughts?

Work + RA over two RA positions for sure. More varied experience will be better for sure. Also, you won't have to be cooped up in the law school all summer (or home) and will get some human interaction doing actual legal work.
