Would you still advise to take another higher offer in the middle of my first week if I get a callback/offer from other firms I recently interviewed with?

Right. This is not like big law, where there is a standard "market" salary that is paid by almost all firms. In the region in which I work, pay in non-big-law firms ranges from above big law market in certain boutiques all the way down to $60K/yr in the lowest-paying lit shops. If the firm the OP is applying to can get associates to work there for $75K/yr, then the pay is not "too low" in a market sense.

What do you think about the idea of jumping ship as soon as better offer comes along in the next two weeks? I have had 2 interviews and they both went well and if I get an offer/cb, I can take them right? Both these firms will pay at least 50K more.
