Do Significant others (non-married) get invited to summer events during summer associate with big law firm?

Usually not. There were a couple events that were okay to bring your family (or an SO), but most weren't really like that. The only time I got my wife into one of those not okay to bring family events was on our anniversary because I made clear to the firm that I wasn't going to be able to make it unless my wife was there.

Depends on the firm. My firm actively encouraged people to bring their non-married SOs.

Depends on the event. I brought my fiancee to a formal dinner with an institutional client where we were encouraged to bring our SOs, but I think the rest of the events were pretty specifically not open to anyone who wasn't in the summer associate class, including SOs.
