From what I've seen you generally know when to stay moderately sober and when to go all out.
Oh good. That's pretty much what I was unclear about. Provided I can generally tell when sobriety's called for, I'm fine.
Have sent emails to counsel (not a partner) saying I planned to head to a bar with hubs, got back "great, have one for me." You will know.

I believe an ability to respond to work emails while hammered is a BigLaw prerequisite.

Have drunkenly typed out more than one email on my phone from a bar. My policy generally is, if its not the night before a closing, and it was not important enough for you to email me about before 10 pm (assuming it has not been an ongoing issue / something I should have anticipated) you will get the best response I can muster and I will clean it up in the morning. Have never had a problem with this approach.

Have also done substantive work pretty drunk (unplanned) and it can be done. Recently compiled a 400 page purchase agreement after helping kill a bottle of bourbon at happy hour on a Friday. Co-worker's wife went into labor early and the senior associate needed help, I was at the bar across the street and agreed to come back and help. She knew I was f'ed up, and I took my sweet time making sure I didn't miss anything. A 30 minute task took over an hour, but it got done.

Tl;dr: don't worry too much, you learn how to roll with it.
