My friend emailed one of his interviewers with "Dear [last name]" because the last name sounded like a first name. He followed up with "Sorry [first name], gmail is confusing lol" and added an extraneous ampersand to the firm name e.g. "I really enjoyed meeting with the attorneys at Sidley & Austin"

As someone who gets these kinds of emails from students during recruiting time, I wouldn't make a big deal of the ampersand thing. Sure, its best to know the proper name of the firm, but its not a big deal (to me at least), and is certainly better than misspelling the firm name. Putting "lol" in an email during the interview process would be a bit more of an issue to me. Let your interviewer or contact make this kind of move first. If the person says "haha" or uses smiley faces, then you can kinda sorta play off that if you really feel the need to. But as a general rule, I advise against it.
