TBF he seem pretty genuine. Some people just thrive on the adrenaline of drafting a contract at 3AM.

Coming across as genuine is not necessarily a good thing. Particularly when you're clearly a psychopath like that guy.

Looking up his credentials, I'm pretty sure he wasn't messing around about all that being the highlight of his career. Kudos to him

Having met the guy, I know how kind he is, although he can come off a bit uncomfortable or awkward when in formal presentation mode like this (as you can tell, he is a corporate guy, and not a trial lawyer). He mentioned that he kinda sorta regretted saying that all nighters are his "fondest" memory of practice.

Eh, the worst times can make some of the best memories. Anyone whose been through basic training or played on a competitive sports team knows this.

Actually I get it. A 24 hour take home test all nighter was one of my fondest 1L memories.

I agree with this as well. Its not like he is saying that working at 3 AM is the good part. Anyone who has pulled that kind of all nighter under pressure knows how terrible it can be. The "good" part is when you get to look back on those awful experiences, and realize you somehow pulled through and did a great job despite the crappy circumstances. Its certainly not going to be a fond experience while you are actually going through it. But you have to reach a low in order to understand what a high is.
