I have interviews with firms way out of my league...
My school has a regional interview program which only has like top 10 firms participating, I signed up and now I have like 20 interviews in California with firms way out of my league grade-wise. Should I go? They don't see my grades before they see me.

I mean if you want California(which I would hope you do since you bid on 20 firms) why not? You clearly go to a good enough school that firms think it isn't a waste to interview people without seeing grades.
I wish I was in your position as the poster from the thread regarding 1/3 at a t25 trying to make it to Cali.

Categorically it's not a waste - there are surprise stories of people from lower ranked schools or GPA levels scoring amazing offers. Statistically it is unlikely, but there's no way to tell you how unlikely without specifics, of course.
Go and have a blast. Worst case you get no offers which would happen if you didn't go anyway.

So many law students overrate the value of their time (and pride).

Where do you go? This sounds like a place that Cali kids should be thinking about if you can get 20 top Cali interviews without grades.

Does your firm also do OCI? At the very worst you are just paying for some pretty useful interview prep leading up to that.

If your grades aren't great why in the world would you think that you're in the position to turn down interviews?
