Excuse for drastic grade drop
If an employer asks why my second semester grades dropped so much, what could I say w/o giving off a sense of bs? I was actually very sick during finals week and I had to just haul through the train wreck, but I feel like this will only make me look weak.

I think you just bid according to your overall GPA and class rank. No one is going to forgive your second semester but few will hold it against you, in my experience. Say you were very sick during finals week if anyone asks but don't bring it up.

Be aware that they might ask why you didn't request an exams extension (or whatever it's called) from your school.

Same thing happened to me - went from 3.8 to 3.3 between first and second semester.
employers never blinked an eye and I never mentioned it. I think it happens a lot.
