RESUME QUESTION: UG Research on resume
should you include research that was conducted as part of a small upper level class, but used by a professor and published on your resume? If so, how? under education? under a separate research header?

Well I know academic resume's have a "publications" section. Maybe create one on your resume. You could only be like a "contributor" or something, but that might be cool to have on an undergrad resume.
