Calling organizations to see if there are still openings?
Is this a bad idea? A lot of places say they fill jobs on a rolling basis, and I don't want to keep wasting time writing custom cover letters for internships that are already full. Is it a bad idea to call to see if there are still openings? If so, should I do so anonymously?

It is not a bad idea. It is a very good idea. If you make sure to be polite, there is no need to be anonymous.
