Is it true that big firms will...
pay off your debt for you if you're a highly qualified candidate? Does this happen or is this some hollywood bs?

I've heard that they will pay your loans by proxy through your bank account. The funds are apparently included in your paycheck.

Some firms used to (and might still) pay a $250,000 bonus to people coming off a SCOTUS clerkship. So yeah.
