Had several good interviews, when to abandon for RA/PIjob?

1L summer.

I have had a few (3) good interviews with public sector stuff with a special factor that interviewers are loving. However, they have made it clear that there are a lot of people aiming for these jobs and they wont get back to me until march. The chances of getting a judicial internship at this point are nil. I highly doubt anything but volunteer public interest (legal clinics and the like) or being a research assistant are left for me at this point if the interviews didn't pan out (although I do feel they went very well).

I have realized that I should spam every crap job in my general area just to get something on the backburner.

My questions are:

When do I approach professors? When do I approach the professor who gave me the top grade on the final?
Is there any way to approach a professor about this without being forced to take the job if they offer?

When do I give up all hope and accept the first PI gig where I get an offer? I am just worried about not getting a job at all at this point.
