Does anyone know how to get the firms emails? Everyone is talking about mail mergers and cold emailing to all these firms, but none of the sites really even have their email address posted anywhere....Am I missing something?

Most firms either have a "Jobs" or "Careers" Link. From there, there should be information regarding the recruiting contact for whichever office you want to apply to. If not, there's usually recruiting contact information on NALPDirectory.Com, although it's unclear how current/accurate the information really is.
If there's no link to apply directly online and you can't find the recruiting contact's name/email, you can always call the firm and ask. I don't know if this is TCR to your question, but that's what I have been doing.

I've had the most success directly emailing partners who are from my undergrad or law school, and ccing the recruiting coordinator if they are easy to find

T25, non-URM, IP. I sent ~50 apps as well. Most were on Dec. 1 or within a few days of it. Received a few interview requests by Mid Dec and a few more in the last week or so. So far all screening interviews have led to CBs.

If one were so lucky to receive a 1L SA offer, is there any scenario where a non-SA job (public interest type) would be beneficial in the long run?

It was not really answered above but is it possible for a firm to rescind their offer because my grades are below median? At a T14 if that helps.
