Question from the other side of this - what should interviewers be wearing to these? Offices have gotten pretty laid back these days, but does that stay true when interviewing someone?

For zoom interviews at my firm the guys have just been wearing the usual polos we've grown accustomed to. We had a couple of in-person interviews this year and it seemed to revert back to at least business casual (nice shirt and slacks, or a suit with no tie. No ties at all actually).

Just a data point, but I'd personally think it ... bold ... to not wear a suit and tie as an interviewee, at least for a NY law firm interview.
