More OMM dinner deets: Associates made clear that callback decisions will be made by the hiring committees at each office, not the interviewers who came here. No certain timeline for when CBs come out.

Aware it varies firm-to-firm, but is there a general convention (even if speculative) regarding callback odds? (i.e. most firms call-back two candidates for every one SA slot, etc.)

page 19 has an interesting table. looks like nationwide its been about 48% CB->Offer, but they have it broken down by region and firm size as well. Looks like generally the bigger the firm and the bigger the market the higher the %.
Some old data from Columbia shows a pretty positive outlook for the V10 in particular. No idea if its still like this or not though...

It's awesome that your interview went well, but I wouldn't read too much into what the firm said. It could mean so many things, the interviewer could have been tired or on autopilot. Take a deep breath and wait till you know for sure.

It was fun but anyone who thought that it was anything more than a good evening and a way for Cravath to build goodwill at NU is kidding themselves.
