I was EIC of a secondary journal and got a handful of e-mails asking us to confirm whether incoming SA 2Ls, 3Ls who accepted offers, and surprisingly even an alum who was a couple years out, were on the journal, and their titles. A couple of times my response was contradictory to what they expected, but I have no idea whatever happened to those who hadn't updated their firms.

Journal is not like billiards club or something where firms don't care if you quit. After I sent my resume to Quinn this summer, they emailed me on the day LR was announced to ask if I made it (no; dinged a week later). Journal clearly matters to some employers, so you should at least do the minimum amount to stay on.
